- 2 Endive
- 200 grams Melon (bite-size cubes)
- 150 grams ham (cut into strips, without fat)
- 2 Tbsps lemon juice
- 4 Tbsps Salad oil
- 200 grams turkey breasts (cut into 12 cubes)
- 6 scallions (cleaned and cut into 18 pieces)
- 2 red Bell pepper (trimmed, halved, seeded and cut into 12 pieces)
- 1 Apple
- 150 grams Sour cream
- salt
- peppers
- 2 Tbsps lemon juice
- 1 Tbsp vegetable oil
Preparation steps

Separate the endive leaves and if desired, halve diagonally, divide among plates.

In a bowl, whisk together the salad oil and lemon juice. Add the melon and ham, toss to combine and arrange on the endive leaves.
3.
Halve and core the apple. Cut one-half into 6 pieces, chop the other chop, immediately sprinkle both with 1 tablespoon lemon juice.
4.
Alternately thread the turkey cubes onto skewers with the scallions, pepper and apple pieces. Season with salt and pepper.
5.
Heat the vegetable oil in a large skillet and saute the skewers until the turkey is just cooked through, about 10 minutes.
6.
In a bowl, mix the sour cream with the remaining lemon juice, season with salt and pepper and serve with the turkey skewers.
