Preparation steps

1.

Cook lentils in twice the amount of boiling water for 20-25 minutes. Cook rice in 2.5 times the amount of salted water with curry powder according to package directions for 16-18 minutes. Then drain and drain both well.

Along the way, peel onions, cut in half and cut into strips. Spinach wash and shake dry.

Heat 2 tablespoons of oil in a frying pan. Fry the onion strips in it for 5-7 minutes over medium heat until golden brown; then remove again.

In the pan, heat the remaining oil. Add cardamom, rice and lentils and fry over high heat, turning, for about 5 minutes. Mix in spinach and cook for another 4-5 minutes. Season vegan fried rice with salt and pepper to taste, sprinkle with the fried onions and serve immediately.
