2 onions
2 beets
2 Tbsps Canola oil

1 sheet Nori seaweed
1 Tbsp Sesame seeds (black and white)
2 stalks Dill
1 Tbsp Caper
2 ozs gherkins
4 eggs

1 Steamer basket, 1 Mini food processor

Preparation steps

Wash potatoes and steam over boiling water for about 30 minutes.

Meanwhile, clean and peel onions and beet and finely dice both. Fry onions in a pan in 1 tablespoon hot oil for 3 minutes over medium heat until light golden brown. Add beet cubes and sauté for 3 minutes. Season with salt, pepper and caraway seeds, add some water and steam in approx. 10 minutes at low heat until done.

For the topping, chop nori leaf, sesame seeds, and a little salt in a blitz chopper. Wash dill, shake dry and pluck off the fronds.

Drain capers and mustard gherkins. Finely dice cucumbers. Peel potatoes and mash until slightly chunky. Mix in capers, cucumbers and beet from the pan and season to taste.

Heat remaining oil in a frying pan. Crack eggs into it and fry over medium heat for 3-4 minutes to make fried eggs. Arrange eggs on the labskaus vegetarian, sprinkle with the sesame nori mixture and garnish with dill flags.
