Preparation steps

1.
Cut the watermelon into wedges and cut from these four slices for the garnish.
2.
Peel the remaining watermelon, remove the seeds and roughly chop the flesh.
3.
Place the flesh in a blender with the lime juice and a small cup of water and blend until smooth. Pass through a fine sieve, sweeten to taste with the sugar and pour into glasses.
4.
Garnish with the reserved watermelon slices and mint sprigs.
