Preparation steps

Crumble yeast, mix with 1 tablespoon sugar and let stand for 2 minutes. Heat milk until lukewarm. Place flour, 125 ml (approximately 1/2 cup) milk, 2 tablespoons sugar, smoothly stirred yeast mixture, egg yolks, 1 pinch of salt and 50 grams (approximately 2 ounces) butter in a bowl and knead with the kneading hook of a hand mixer until smooth. Cover and let rise for 30 minutes in a warm place. Break nut chocolate into pieces.

Chop chocolate coarsely. In a small saucepan, bring cream and remaining milk to a boil, take pan off heat and melt dark chocolate while stirring. Coarsely chop walnuts.

Knead dough briefly and shape into 4 equal flat pieces. Spread nut chocolate in the center of the pieces, squeeze dough over and shape with floured hands into dumplings. Let rest on a floured board for 15 minutes.

Place water in a large pot of 25 cm (approximately 9 1/2 inch) diameter and about 5 cm (approximately 1 3/4 inches) tall. Place a dish towel over the pot and clamp securely with kitchen string. Brush cloth with a little butter. Bring water to a boil and place dumplings on the cloth. Invert a second pot or a bowl of the same size over it. Steam dumplings for 25 minutes at medium heat, without lifting the upper pot.

Melt butter, toast walnuts and remaining sugar in it while stirring. Immediately open dumplings with two forks so that the steam can escape. Baste with chocolate sauce and walnut butter, serve dusted with powdered sugar.
