Preparation steps

Peel the white asparagus and cut off the ends. Peel the bottom third of the green asparagus and cut off the ends. Rinse all asparagus and cut into pieces. Boil asparagus, separating white from green, in salted water until al dente, or for about 4-6 minutes. Remove with a slotted spoon and briefly rinse with cold water. Drain well. Rinse and pat dry the lettuce hearts. Peel and finely chop the onion. Mix together the vinegar, salt, pepper and sugar. Gradually stir in the oil, onion and herbs. Arrange asparagus and lettuce on plates and drizzle with the vinaigrette. Serve garnished with basil leaves.
