Bagel with Avocado, Strawberries and Cress

This unique bagel topping is brimming with summer flavor as well as heart-healthy fatty acids from the avocado and valuable minerals such as magnesium and phosphorous from the strawberries.
Feel free to skip the strawberries for a more traditional yet still delicious avocado bagel toast recipe.

- 9 ozs white or green Asparagus
- salt
- 1 tsp sugar
- 1 lemon (juiced)
- 1 large Avocado
- 1 Tbsp grainy Mustard
- 7 ozs Strawberries
- 4 Sesame bagel
- 1 Cress
Preparation steps
Rinse asparagus, peel bottom third, trim ends and cook in a pot with a little boiling water, 1 teaspoon salt, sugar and 1-2 tablespoons lemon juice for 15-18 minutes until al dente. Drain, rinse with cold water, drain again and cut into bite size pieces.
Cut avocado in half, remove pit, peel and mash or puree avocado in a bowl with a fork. Add mustard, stir and season with lemon juice and salt.
Rinse strawberries, pat dry, trim and cut into small pieces. Cut bagels in half and toast if desired. Spread avocado cream on the bottom half, arrange strawberries and asparagus on top and sprinkle with cress. Cover with top half, cut in half vertically and serve.
