800 grams Monkfish (trimmed, ready to cook)
4 Tbsps olive oil
1 tsp ginger (freshly grated)
1 tsp Cumin
1 tsp Turmeric
½ generous pinch allspice
2 Tbsps soy sauce
400 grams fresh Pineapple
250 grams Wild rice

Preparation steps

Rinse and pat dry monkfish.

Stir together the oil and spices mix and rub evenly over the monkfish. Place in an ovenproof dish. Cover and refrigerate for about 2 hours.

Cook rice according to instructions on the package.

Cut the pineapple into small dice, then sprinkle over the fish and together in an oven preheated to 200°C (approximately 400°F). Bake for about 10 minutes. Turn the oven off and let finish cooking for another 5 minutes.

To serve, slice the monkfish and serve on the rice topped with pineapple.
