1 red pointed cabbage
2 Tbsps white or yellow Miso paste
5 Tbsps olive oil
2 ½ ozs Cashews
2 Tbsps Sesame seeds
1 Tbsp Raw cane sugar
1 organic lime (peel and juice)

Preparation steps

Remove outer leaves from pointed cabbage, wash cabbage and cut into 8 wedges. Mix miso paste with 4 tbsp. oil and brush cabbage with it. Spread on a baking tray lined with baking paper and bake in a preheated oven at 180 °C / 350 °F for approx. 25 minutes.

Meanwhile, for the crunch, coarsely chop cashews and toast with sesame seeds in a pan without fat for 2-3 minutes over medium heat until golden brown. Sprinkle with sugar and let caramelize for 3-4 minutes. Transfer crunch to a plate and let cool for 5 minutes. Then break it into small pieces.

For the dressing, mix lime zest and juice with the remaining oil. Remove baked pointed cabbage from oven, arrange on plates, drizzle with lime dressing and sprinkle with the crunch.
