2 Passion fruit
1 Orange (juiced)
1 tsp brown sugar
Sea salt

8 Langoustine (unpeeled, cleaned)
Red pepper flakes
1 Tbsp freshly chopped parsley

Preparation steps

Peel the white asparagus and trim any woody ends.

Line a baking dish with parchment paper.

Arrange the white asparagus into the lined baking dish.

Cut the passion fruit into halves and scrape out the pulp into a bowl, including the core. Stir in the orange juice and brown sugar, season with salt and pepper, and spread evenly over the asparagus. Top with 2 tablespoons butter in small pieces. Fold the parchment paper over the asparagus and close well. Bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for about 30 minutes.

Rinse the langoustine and pat dry. Heat the remaining butter in a pan and fry the langoustine for about 2 minutes. Season with salt and red pepper flakes, and mix in the parsley.

Remove the asparagus from the oven, open the parchment paper, put the langoustine on top, and serve.
