1 kilogram Beef (from neck)
4 Red onions
2 garlic cloves
2 Tbsps vegetable oil
1 tsp Caraway
1 Tbsp Tomato paste
200 milliliters dry Red wine
500 milliliters Beef broth
2 Tbsps ground paprika (sweet)
salt
cayenne pepper
parsley (for garnish)

Preparation steps

1.

Rinse meat, pat dry and cut into bite-size cubes. Peel onions and garlic. Chop garlic finely and cut onions into chunks.

Heat oil in a saucepan. Add meat and sear while stirring occasionally. Add onions and cumin to the pan and cook for a few minutes. Add garlic and mix in tomato paste. Deglaze with red wine. Add about 300 ml (approximately 1-1/4 cup) of broth. Mix in paprika and cover, gently simmering for about 1.5 hours on low heat. Stir occasionally and add more broth as needed.

Season with salt and cayenne pepper to taste and garnish with parsley.

Serve with prepared gnocchi, if desired.
