- 6 cups Beef stock
- 1 stick cinnamon
- 2 Star anise
- 2 Limes (juiced)
- 2 Tbsps Fish sauce
- 1 Tbsp light soy sauce
- 1 tsp sugar
- 21 ozs Beef fillet (finely sliced)
- 7 ozs Rice noodles (soaked according to packet instructions)
- 1 cup Bean sprout
- 4 scallions (finely sliced)
- 2 red chili peppers (deseeded and finely sliced)
- cilantro (to garnish)
- 2 Limes (halved, to garnish)
Preparation steps
1.
Place the stock in a large pan with the cinnamon and star anise and bring to a boil.

Simmer for 5 minutes then add the lime juice, fish sauce, soy sauce and sugar and simmer for 5 more minutes.
3.
Add the beef, noodles, spring onions and chilli, simmer for 5 minutes or until the beef is just cooked then check the seasoning and serve garnished with the coriander and lime.
