150 grams Buckwheat flour
150 grams Pastry flour
1 pinch salt
20 grams Yeast (1/2 cube)
300 milliliters milk
2 Tbsps butter
2 eggs
butter (for cooking)
400 grams Raspberries
2 Tbsps honey
4 centiliters raspberry Brandy

Preparation steps

1.

Separate eggs. Mix flour and buckwheat flour. Dissolve yeast in milk and combine with melted butter and seson with salt. Combine with flour and leave, covered, in a warm place.

2.

Beat egg whites until stiff and fold into batter before baking. 

3.

Heat some butter in a pan, place few tablespoons of batter into it and flatten. Cook until golden on both sides. Prepare the rest of blinis in the same manner. 

4.

Combine raspberries with raspberry liqueur and honey and bring to a boil. Cool slightly. Arrange blinis on plates and drizzle with raspberry sauce. Serve.
