3 ozs grated Emmentaler cheese
3 ozs grated Hard cheese (with microbial rennet; e.g. Montello)
3 tsps Psyllium
1 tsp dried oregano
salt

1 onion
2 garlic cloves
½ oz Basil
2 Tbsps olive oil
10 ozs peeled Tomatoes (can)
6 ozs button Mushroom
4 ozs Blue cheese

1 Mini food processor, 1 Knife, 1 Cutting board

Preparation steps

1.

Clean, wash and finely chop the broccoli in a mixer or food processor. Mix eggs with cheese, psyllium, oregano, salt and pepper thoroughly and let it swell for 10 minutes.

Mix the mixture with the broccoli. Spread the broccoli mixture on two baking sheets covered with baking paper to form four thin flat cakes and pre-bake in a preheated oven at 390 °F for 12-15 minutes.

Meanwhile peel and finely chop the onion and garlic. Wash basil, shake dry and put some leaves aside, chop the rest.

Heat the oil in a small pot, sauté the onion and garlic for 2 minutes over medium heat. Add the tomatoes and basil and simmer the sauce over a low heat for 5 minutes. Season to taste with salt and pepper.

5.

Spread the tomato sauce on the flat cakes. Clean and thinly slice the mushrooms and spread them on the pizzas. Crumble blue cheese over them. Bake the pizzas in about 15 minutes. Sprinkle pizzas with basil leaves and serve warm.
