2 Tbsps light soy sauce

1 Tablespoon, 1 Small skillet, 1 Small pot, 1 Wooden spoon, 1 Cutting board, 1 Small knife, 1 large Skillet (with lid), 1 Baking sheet, 1 Slotted spatula, 1 Brush

Preparation steps

Toast sesame seeds in a dry frying pan until golden brown over medium heat. Remove from heat and let cool.

Add miso, sugar, mirin, rice vinegar, vegetable broth and soy sauce to a small pot. Bring to a boil over medium heat, stirring. Remove from heat and set aside.

Rinse eggplant, wipe dry and cut in half lengthwise. Score cut surfaces crosswise. Heat oil in a large non-stick skillet.

Working in batches, fry cut surfaces of eggplant halves until golden brown for 3-4 minutes. Turn eggplant halves, cover and cook until soft over medium heat, 3-4 minutes. Then place skin-side down on a baking sheet.

Brush with the mirin-miso mixture and broil 4-5 minutes under the preheated oven broiler. Before serving, sprinkle with sesame seeds.
