6 sheets white gelatin

4 Tbsps liquid honey
200 milliliters Buttermilk
200 grams Cream quark (40% fat)
1 Tbsp powdered sugar (10 grams)
1 heaping Tbsp chopped Pistachio (20 grams)

Preparation steps

1.

Soak gelatin in cold water for 5 minutes. Slit vanilla pod lengthwise and scrape out the seeds.

2.

Mix 3 tablespoons honey with buttermilk, cream quark, vanilla seeds and powdered sugar.

Remove gelatin from the water and place dripping wet in a small pan. Heat until gelatin has dissolved.

4.

Remove pot from heat, add 3 tablespoons of buttermilk mixture to the pan and stir until smooth. Stir gelatin mixture into the remaining buttermilk mixture.

5.

Rinse 4 small ramekins (about 125 ml capacity) (about 1/2 cup capacity) with cold water. Pour in buttermilk mixture and refrigerate for 3 hours.

6.

Unmold buttermilk panna cotta on 4 dessert plates (if necessary, dip ramekins briefly in hot water). Drizzle with remaining honey and sprinkle with pistachios.
