- 2 tsps grated Orange peel
- 2 Oranges Juiced (about 120 ml)
- 150 grams Crème fraiche
- salt
- 400 grams Celery root
- 1 Apple
- 2 Tbsps Sunflower sprout (or others)
- 2 dried Apricot
- 2 tsps pink peppercorns
Preparation steps
1.
Mix orange juice in a large bowl with orange zest, creme fraiche and a little salt.

Peel celery, rinse and cut into fine strips or grate coarsely. Immediately fold celery into creme fraiche mixture.
3.
Rinse apples, cut into quarters, remove core and cut into strips. Immediately mix apples into creme fraiche mixture.
4.
Rinse sprouts briefly and drain. Cut apricots into fine strips. Add appricots, sprouts and pink peppercorns to the salad and mix.
5.
Serve if desired with whole wheat rolls.
