4 Chicken breasts
1 onion
1 bay leaf
2 cloves
100 milliliters white wine
Lettuce
4 sticks Celery
1 Apple
4 Tbsps Mayonnaise
½ organic lemon
1 Tbsp Crème fraiche
1 Tbsp Crème fraiche
2 Tbsps Walnut (coarsely chopped)
salt
cayenne pepper

Preparation steps

Rinse the chicken breasts, pat dry. Peel the onion and coarsely chop. In a saucepan bring the white wine, bay leaf, cloves and 200 ml (approximately 7 ounces) of water to a boil. Add the chicken breasts and if not covered, a little more water, and cook over low heat until just cooked through, about 15 minutes.Remove from the cooking liquid, reserving the liquid and let cool, then cut into pieces.

Grate the lemon zest and set aside. Squeeze the juice into a bowl and whisk in the mayonnaise and creme fraiche and season with salt and cayenne pepper.

Rinse and spin dry the lettuce and place in bowls.

Rinse, remove the strings and slice the celery. Peel and halve the apple, remove the core the apple. Add the chicken, celery and apple to the mayonnaise mixture along with a little of the chicken poaching liquid if necessary. Season and spoon over the lettuce. Sprinkle with lemon zest and serve garnished with parsley and walnuts.
