- 100 grams cooked chicken
- Bell pepper (1 small red and yellow)
- 2 scallions
- 2 Tbsps olive oil
- 1 Tbsp White vinegar
- 1 Tbsp lemon juice
- 1 Tbsp Caper
- salt
- freshly ground peppers
- 2 sprigs Basil
Preparation steps

Arrange chicken slices in an overlapping pattern on 2 plates. Rinse and halve pepper, remove seeds and ribs and finely dice. Rinse, trim and slice scallions crosswise.

Sauté pepper and scallions in 1/2 tablespoon oil, about 2 minutes. Remove from heat. Stir in vinegar, lemon juice, capers and remaining oil. Season with salt and pepper.

Drizzle vinaigrette over chicken slices. Rinse basil, pat dry, tear large leaves into pieces and sprinkle over the chicken. Serve with small slices of whole-grain bread.
