- ½ oz cilantro
- 2 garlic cloves
- 1 organic lime
- 3 ozs Pumpkin seed
- 6 Tbsps olive oil
- salt

- 28 ozs Chicken legs (4 chicken thighs)
- 28 ozs Butternut squash
- 1 red chili pepper
- 3 ½ ozs Feta
Preparation steps
Wash cilantro, shake dry, set aside a few leaves, chop the rest. Peel the garlic. Cut lime in half, slice one half, squeeze juice from the second. Blend juice with cilantro, garlic, pumpkin seeds and 4 tablespoons oil to make a pesto. Season to taste with salt and pepper.
Rinse chicken thighs, pat dry and divide at the joint. Rub with half of the pesto and place in a baking dish.
Peel the pumpkin, remove the seeds and fibers and cut into slices. Place between the chicken pieces, drizzle with remaining oil and season with salt and pepper. Bake in preheated oven at 200 °C / 400 °F for 40 minutes until golden brown.
Cut chili pepper in half lengthwise, remove seeds, wash and cut into fine strips. Remove chicken from oven and crumble feta on top. Arrange decoratively with remaining pesto, lime slices and cilantro leaves.
