- 6 Tomatoes
- 1 Red onion
- 2 scallions (green parts only)
- 3 Tbsps olive oil
- salt
- sugar
- lemon juice
- cayenne pepper
Preparation steps
1.
Rinse, quarter and remove the seeds from the tomato and dice the flesh.
2.
Peel and chop the onion. Rinse and slice the scallion greens diagonally into thin rings.
3.
Mix the tomatoes, onion, green onions and olive oil together.
4.
Season to taste with salt, sugar, lemon juice and cayenne pepper.
5.
Serve with corn chips.
