1 Peeler, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Pot (with lid), 2 Bowls, 1 Citrus juicer, 1 Measuring cups, 1 Teaspoon, 1 Wooden spoon, 1 Tablespoon, 1 Salad server, 1 Fork

Preparation steps

Rinse orange with hot water and wipe dry. With a vegetable peeler, peel half of the shell in thin strips. Halve and juice the orange.

Bring vegetable broth and orange peel to a boil in a large pot. Add brown rice, stir, cover and cook over low heat, about 25 minutes.

Remove the orange peel. Place rice in a bowl and allow to cool.

Rinse the cucumber, halve lengthwise and scoop out the seeds using a small spoon. Slice diagonally into thin slices.

Trim, rinse, wipe dry and thinly slice radishes. Remove radish leaves and reserve.

Whisk together 3 1/2 tablespoons of orange juice with 2 tablespoons of vinegar. Season with salt, and pepper and whisk in the oil. Mix into the rice.

Combine radish and cucumber slices with the rice, cover and set aside to marinate for 15 minutes.

Cut smoked ham into strips and gently fold into the salad.

Cut radish leaves into thin strips and mix into the salad. Season salad to taste with salt, pepper, vinegar and remaining orange juice and serve.
