Instead of beans, green asparagus is also a great accompaniment to this delicious spring salad. Wash the vegetables, cut off the woody ends and peel the lower third of the stalks if necessary. Then cook them in boiling salted water for about 5 minutes, drain them just like the beans and rinse with cold water.

½ Batavia lettuce
1 lemon (juiced)
4 Tbsps olive oil
1 pinch Aleppo pepper
½ tsp Sumac

Preparation steps

1.

Rinse and trim the beans, then blanch in boiling salted water for 8 minutes until al dente. Remove from the water, shock in an ice water bath, and drain thoroughly.

Cover the couscous with 250 ml (approximately 8 ounces) of boiling water. Let soak for 10 minutes until then liquid is absorbed, then fluff with a fork.

Rinse, trim, and thinly slice or shave the radishes. Rinse the lettuce and pat dry.

Mix the lemon juice with the oil, aleppo pepper, and sumac. Season to taste with salt, pepper, and sugar. Crumble the feta cheese. Mix the feta cheese, green beans, couscous, radishes, and the dressing. Toss gently to combine, and serve on top of the lettuce.
