150 grams instant Couscous
2 red and yellow Bell pepper
4 Tomatoes
½ Cucumber
1 handful parsley
2 sprigs Dill
3 sprigs mint
100 grams Feta
3 Tbsps white balsamic vinegar
6 Tbsps olive oil

Preparation steps

Cook couscous according to package directions, fluff and let cool. Rinse peppers, halve, remove seeds and ribs, and finely chop. Rinse tomatoes, cut into quarters, remove the seeds and cut the flesh into small cubes. Rinse cucumber and cut into small cubes.

Rinse herbs, pat dry and pluck the leaves. Set aside some leaves for garnish and chop the remaining leaves. Crumble the feta.

3.

Fold together gently all the prepared ingredients. Dress the salad with oil and vinegar and season with salt and pepper to taste. Serve in bowls and garnish with the reserved herbs.
