- 2 shallots
- 2 Tbsps green peppercorns
- 2 Tbsps olive oil
- ⅜ cup dry white wine
- 1 cup canned Tomatoes (chopped)
- 4 Tbsps Crème fraiche
- 4 tsps Cognac
Preparation steps
1.
Peel the shallots and slice thinly.
2.
Heat the oil in a pan and saute the pepper corns for 2 minutes. Add the shallots and continue to saute for another minute.
3.
Pour in the white wine and add the tomatoes. Simmer, stirring occasionally, for about 20 minutes.
4.
Stir in the creme fraiche and cognac.
5.
Season to taste with salt.
