Preparation steps

Rinse the currants and remove from the vine. Bring the currants, 50 g (approximately 2 ounces) of sugar, and 125 ml (approximately 4 ounces) of water to a boil, stirring constantly. Pass through a fine strainer lined with cheesecloth, and squeeze well. Measure the juice and bring to a boil with the same amount of jam sugar. Cook for 4 minutes, until the jam begins to thicken.

Fill the prepared jars to the brim with the hot jelly. Seal tightly, and turn upside down to cool for 15 minutes. Turn right side up and cool completely.
