- 400 grams Broad bean (peeled)
- salt
- 2 red Bell pepper
- 1 red, large onion
- 4 Tbsps olive oil
- 2 Tbsps light balsamic vinegar
- peppers
- 2 ripe Avocados
- 400 grams smoked Mackerel
- parsley (for garnish)
Preparation steps
1.
Rinse, trim and blanch the fava beans for about 6 minutes in boiling salted water. Rinse in cold water and drain well. Rinse the bell peppers, cut in half, remove seeds and ribs and cut into narrow strips.

Peel the onion, finely chop and mix with the oil and vinegar. Season with salt and pepper. Cut the avocado in half, remove the pit and remove the flesh from the shell. Cut into wide, thin slices, mix in with the bread beans, bell peppers and vinaigrette and arrange on plates. Cut the mackerel fillets into pieces, arrange on the salad and serve garnished with parsley leaves.
