- 1 Orange (juiced)
- 1 Tbsp very finely chopped scallions
- 1 tsp honey
- salt
- cayenne pepper
- 1 handful baby Spinach
- 500 grams Cod
- 2 Tbsps freshly chopped parsley
- 2 Tbsps grapeseed oil
- 1 Tbsp lemon juice
- freshly ground peppers
- 80 grams Caviar
- 4 tsps Whipped cream
Preparation steps
1.
Whisk orange juice with chives and honey. Season with salt and cayenne pepper.

Rinse and spin dry spinach.
3.
Rinse fish, pat dry and chop into small pieces. Mix with parsley, oil and lemon juice, season with salt and pepper.

Arrange spinach leaves in circles in the middle of plates. Place metal rings on top (10 m in diameter) (approximately 4 inches) and fill with fish tartare. Top with caviar and garnish with dollops of sour cream. Remove metal rings.
5.
Drizzle sauce around and serve.
