4 Plaice (each 300 grams, ready to cook, with skin)

2 Tbsps butter
2 Tbsps vegetable oil

Preparation steps

Preheat the oven to 80°C (approximately 175°F).

Squeeze 1 lemon. Slice remaining lemon. Rinse flounder, pat dry and drizzle with lemon juice. Season with salt and pepper and coat with flour, shaking off excess flour. Peel onion and chop finely. In a large non-stick skillet, heat 1/2 tablespoon butter and oil and fry the flounders 1 at a time until golden brown, 3 minutes on each side. Keep warm in preheated oven. Dice the bacon finely, cook in the remining fat in the skillet and add the diced onions. Sauté until soft. Drizzle bacon over the fish and serve garnished with the lemon slices. Serve with a potato salad, if desired.
