Preparation steps

1.

Cook snow peas in salted boiling water, about 5 minutes. Drain, rinse with ice-water, then let drain again.

Sprinkle fish fillets with lemon juice and season with salt and pepper. In a pan, sauté fish in 1 tablespoon melted butter, about 3 minutes per side.

3.

To serve, melt remaining butter in a pan. Add snow peas and swirl until coated. Season with salt and pepper.

4.

Divide fish fillets and snow peas among plates.
