6 cups carrots (grated)
3 unwaxed Oranges (squeezed)
2 ¼ cups jam sugar (2:1)

Wash the berries and drain well or pat dry with kitchen paper. Remove from the stem using a fork.

Put the grated carrot in a saucepan and sweat briefly, stirring.

Add the currants and sugar and mix well.

Add the orange juice and bring to the boil.

Cook at a rolling boil for 4 minutes. Stir constantly to stop the jam from boiling over.

Do a setting test: use a spoon to drop a little of the hot jam mixture onto a cold plate and wait for a short while. Tilt the plate - if the mixture runs, simmer it a little longer. If it remains in place, it is ready and can be tipped into well-rinsed jars immediately. Seal tight and stand on their lids for approx. 10 minutes while cooling. Turn the right way up and leave to cool completely.
