300 grams Strawberries

2 Tbsps honey
1 pc ginger (3 cm)

Preparation steps

Rinse asparagus thoroughly, peel, cut off the woody ends and cook until al dente in plenty of boiling salted water with sugar 10-12 minutes. Peel orange, removing bitter white pith. Cut between membranes to remove whole segments, then squeeze membranes to release extra juice. Rinse strawberries, trim and cut into small pieces. Cut asparagus diagonally into about 3 cm long pieces. Mix asparagus, strawberries and orange segments in a bowl.

Combine orange juice with honey and season with pepper. Peel ginger and press through a garlic press. Toss the sauce with the salad ingredients and marinate about 1 hour. Before serving, mix in finely chopped mint leaves, and divide among glasses.
