1 Tbsp honey
2 Oranges
1 Grapefruit
2 Apple
1 white Endive
1 red Endive

2 Tbsps Walnut oil

Preparation steps

1.

Combine trail mix with vinegar and honey.

Peel oranges and grapefruit with a sharp knife, removing as much pith as possible, fillet. Collect all resulting juice and squeeze juice from remaining pulp. Rinse and peel apples, core and cut into wedges. Mix with mixed citrus juice.

3.

Remove outer endive leaves and cut into bite-sized pieces. Arrange on plates and top with citrus fillets and apple wedges. Whisk walnut oil with trail mix blend and season with salt. Drizzle dressing over salad and serve.
