4 Tbsps Pumpkin seed oil
4 Tbsps apple cider vinegar
1 tsp honey
2 Tbsps water

Preparation steps

1.

Remove the outer leaves from the endive, cut in half, remove the stalk and cut into bite-sized strips. Peel the apple, cut into quarters, remove the seeds and cut into bite-sized cubes. Cube the Roquefort.

2.

Mix the endive, apple, Roquefort and walnut pieces. Mix the pumpkin seed oil with the vinegar, water, honey and pepper, whisk and pour over the salad. Let the salad marinate before serving.
