Preparation steps

Rinse and quarter tomatoes. Remove seeds and dice. Peel and finely chop shallots. Mix shallots with parsley and tomatoes and season with lemon juice, salt, and pepper. In a pan, briefly cook mixture in 1 tablespoon oil until translucent. Crumble feta into mixture.

Divide mixture evenly among four tortillas. Top with remaining tortillas and press to seal. On a hot grill, cook quesadillas until golden-brown, 1-2 minutes per side. Cut into pieces and serve with guacamole.
