1 Bowl, 1 Small bowl, 1 Cutting board, 1 Large knife, 1 Tablespoon, 1 Teaspoon, 1 Coarse grater, 1 Whisk, 1 Salad spinner

Coarsely chop the olives.

Mix vinegar, mustard, quince jelly and salt and pepper together in a bowl. Slowly whisk in oil.

Mix the olives into the dressing.

Cut manchego cheese into thin slices and crumble with your fingers (or coarsely grate).

Trim lettuce and endive, rinse and spin dry. Tear or cut into bite-sized pieces and place in a large bowl.
