- 200 grams grated Hazelnuts
- 150 grams butter
- ½ tsp Ground cinnamon
- 150 grams honey
- 6 eggs
- 2 Tbsps Almond liqueur
- Orange zest
- 200 grams finely ground Wheat
- 60 grams finely ground Buckwheat
- 2 tsps Carob (or cocoa powder)
- 2 tsps cream of tartar
- butter (for the mold)
- breadcrumbs (for the mold)
Preparation steps

In the bowl of an electric mixer, beat the butter with cinnamon and honey until creamy. Add the eggs one at a time, beating well after each addition. Grate the orange zest and add to the bowl along with the almond liqueur.
Preheat the oven to 180°C (approximately 350°F).

In a bowl, stir together the wheat and buckwheat flour with the carob and baking powder and mix into the batter along with the hazelnuts. Butter a 30 cm (approximately 12-inch) loaf pan and sprinkle with breadcrumbs.

Scrape the batter into the pan, smooth the top and bake until a toothpick inserted into the cake comes out clean, about 50 minutes. Cool briefly, then invert onto a wire rack, turn right side up and cool completely.
