800 grams starchy potatoes
2 onions
80 grams Bacon
2 Tbsps butter
100 milliliters milk

Preparation steps

Rinse the potatoes and cook for 30 minutes in boiling water until soft. Peel the onions, cut in half, and julienne. Finely dice the bacon. Heat 1 tablespoon of butter in a pan, and sauté the onions. Add the bacon, and sauté for 2-3 minutes, stirring occasionally.

Drain the potatoes and dry slightly. Peel the potatoes, then pass through a ricer. Melt the butter in a pot, and add the potatoes. Heat the milk, add to the potatoes, and stir until smooth. Season to taste with salt, pepper, and nutmeg. Transfer the potatoes to a bowl, top with the onion-bacon mixture, and serve.
