- 8 dried shiitake mushrooms
- 1 ¾ cups Rice noodles
- 4 cups vegetable stock (or chicken stock)
- 3 Tbsps soy sauce
- 2 Tbsps fresh ginger (finely grated)
- 2 carrots (finely diced)
- 1 red chili pepper (finely sliced)
- 2 cups Bok Choy
- 1 ½ cups Silken tofu (cubed)
- 4 scallions (sliced diagonally)
Preparation steps
1.
Soak the dried mushrooms in boiling water for approximately 15 minutes. Drain and squeeze dry, then slice.

Cook the noodles in boiling water for 5 minutes, drain and rinse in cold water.
3.
Bring the dashi stock to the boil in a large saucepan. Add the soy sauce, grated ginger, diced carrot, chilli, pak choy, spring onion, mushrooms and tofu.
4.
Simmer for 8 – 10 minutes, then season to taste with salt and pepper. Divide the noodles between the bowls and ladle the broth on top.
