Coarsley chop the pine nuts or almonds. Stir together the nuts with the oats, cinnamon and salt in a bowl.

Combine the honey, maple syrup and oil in a pot and bring to a boil, stirring frequently.

Slowly pour honey mixture over the oat mixture, stirring to combine.

Line a baking sheet with parchment paper. Spread the oat mixture evenly on the sheet.

Bake in a preheated oven at 225°F until golden brown, about 1 1/4 hours, turning gently 2 or 3 times.
