12 ozs Whole Wheat Spaghetti
salt
5 Tbsps olive oil
10 ozs Ground beef
peppers
1 Tbsp ground fennel seeds
5 ozs mixed Cherry tomatoes (yellow, red)
1 Radicchio
1 ½ ozs Pine nuts (3 TBSP.)
3 Tbsps green Olives (with paprika stuffing)
1 Tbsp Walnut oil
2 ½ Tbsps bright balsamic vinegar
1 tsp honey
1 organic lemon (shell)
2 ½ ozs Basil (1 handful)

Preparation steps

Cook spaghetti in boiling salted water for about 7 minutes until al dente. Then drain, drain and put in a bowl.

Meanwhile, heat 1 tablespoon oil in a large frying pan. Fry minced meat in it for 8-10 minutes over medium heat until crumbly. Season with salt, pepper and fennel and add to pasta.

Wash the cherry tomatoes, cut them in half and add to the bowl. Cut radicchio into quarters, remove stalk, wash leaves and spin dry. Roast pine nuts in a hot pan without fat over medium heat for 3 minutes. Halve olives. Add all prepared ingredients to the bowl.

For the dressing, mix remaining olive oil with walnut oil, vinegar, honey and lemon zest. Pour dressing over salad, mix well, season to taste and let stand for 10 minutes. Meanwhile, wash basil, shake dry and cut into fine strips. Arrange colorful spaghetti and minced meat salad in a bowl and sprinkle with basil.
