- 2 sticks Celery (chopped)
- 4 scallions (chopped)
- 2 cloves garlic cloves
- 2 bay leaves
- 1 tsp chopped thyme
- 1 ½ cups Pearl barley
- 3 cups vegetable stock
- ½ tsp salt
- freshly ground peppers
- olive oil
Preparation steps
1.
Put the celery, spring onions, garlic, herbs, barley and stock in a pan and bring to a boil stirring constantly. Cover and simmer very gently for about 30 minutes, until all the stock is absorbed. Remove the bay leaves.

Remove from the heat, season with salt and pepper and put half the mixture in a blender or food processor and blend to a puree.

Stir the puree into the remaining barley mixture. Leave to cool and chill until firm.

Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a baking tray.
5.
Shape the mixture into patties with damp hands.
6.
Place on the baking tray and brush with oil. Bake for 15–20 minutes until lightly golden.
7.
Serve with salad and julienned beetroot.
