½ cup Wild rice (well rinsed)
salt
1 Tbsp olive oil
1 onion (finely chopped)
2 cloves garlic cloves (crushed)
1 ¾ cups Quinoa
3 cups water
1 tsp paprika
2 cooked Sweet potato (mashed)
2 eggs (beaten)
½ cup Wholemeal breadcrumbs
½ cup dried Cranberry
salt

Preparation steps

1.
Cook the wild rice in a pan of boiling salted water according to the directions on the pack. Drain well and set aside.
2.
Heat the olive oil in a large pan and cook the onion and garlic until softened.
3.
Add the quinoa, water and paprika. Cover, bring to a boil and then reduce to the heat and simmer for 10-15 minutes until the liquid is absorbed. Tip into a bowl.
4.
Add the sweet potato and mix well, then add the wild rice, eggs, breadcrumbs and cranberries and stir until thoroughly combined. Season to taste with salt and pepper.
5.
Leave to stand for 15 minutes.
6.
Heat the oven to 200C (180C fan) 400F, gas 6. Line a large baking tray with non-stick baking paper.
7.
Shape the cooled mixture into patties and place on the baking tray.
8.
Bake for 20-25 minutes until golden and piping hot. Cool on the tray for 5 minutes before serving
