Preparation steps

Mix together garlic powder, oregano, thyme, cumin, and coriander. Cut pork into cubes and toss with spice mixture and olive oil until coated. Cover and marinate about 1 hour at room temperature.

Preheat the grill. Meanwhile, rinse purslane and spin dry. Thread pork onto skewers and place on grill. Cook skewers on all sides, 8-10 minutes. Serve skewers on a bed of purslane.
