- For the potatoes
- 1 kilogram potatoes
- 2 eggs
- 2 Tbsps Pastry flour
- 1 tsp salt
- 4 Tbsps vegetable oil (for cooking)
- For the sandwich
- 4 Tomatoes
- 100 grams smoked turkey breasts
- some leaflets Lettuce
- Mayonnaise
- For the garnish
- Ketchup
- Mayonnaise
Preparation steps

For the potatoes: Peel, rinse and coarsely grate potatoes. Combine potatoes, eggs, flour and salt. Heat oil in a large non-stick pan. Add 2-3 tablespoons of potatoes, flatten and cook until golden. Then flip and cook until golden on reverse side. Remove and drain on paper towels. Repeat until all potato mixture has been used.

For the sandwiches: Rinse and slice tomatoes. Slice turkey breast. Rinse lettuce leaves and spin dry. Place a dab of mayonnaise and ketchup onto half the potato pancakes and spread. Top with tomatoes, lettuce and turkey breast. Top remaining pancakes with mayonnaise and ketchup and serve.
