18 ozs mixed potatoes (such as peewee potato, blue Swede, Red King Edward)

1 Tbsp grainy Mustard
3 ozs Vegetable broth
2 Tbsps apple cider vinegar
1 pinch sugar
6 ozs Edible flowers (baby leaves and flowers)
12 ozs Smoked mackerel (ready to use)
2 Tbsps Canola oil

Preparation steps

1.

Scrub potatoes and cook in salted water for about 30 minutes or until knife-tender.

2.

Whisk mustard with broth, vinegar and sugar and heat up. Peel and slice potatoes. Pour broth mixture over potatoes and let cool until warm. 

3.

Rinse flowers, clean as needed and pat dry. Arrange with smoked mackerel on plates. Add oil to potatoes and mix well, spread on fish and herbs and serve.
