2 white onions
1 garlic clove
1 walnut sized pc ginger
2 scallions
4 Tbsps vegetable oil
3 Tbsps Sherry vinegar
1 tsp Maple syrup
salt
freshly ground pepper
1 Papaya
8 King prawn (cooked, with tail)
100 grams Alfalfa sprouts
1 bunch Cress

Preparation steps

1.

Peel and finely chop the onion and garlic. Peel and finely dice the ginger. Rinse and finely chop the scallions.

Heat oil in a pan. Saute the onions, garlic, ginger and scallions. Pour all into a bowl and stir with the vinegar and maple syrup. Season with salt and pepper.

3.

Peel and halve the papaya and remove the seeds. Cut the flesh into thin strips. Rinse the prawns, pat dry and cut along the back to the tail. Rinse and drain the alfalfa sprouts. Arrange the alfalfa, prawns and papaya on plates. Drizzle the sauce on top. Serve garnished with watercress.
