14 allspice (crushed)
14 black peppercorns (crushed)
3 bay leaves
2 lemons (finely pared rind)

Preparation steps

Place the herring fillets in a baking dish. Mix the salt with a pinch of sugar and cover the fish with the mixture. Cover and chill for 24 hours.

Heat the oven to 220°C (200° fan) 425°F gas 7.

Put the vinegar, water, sugar, spices and bay leaves in a pan. Stir until the sugar has dissolved.

Wipe the salt off the herring and discard. Add the fish to the pan and bring to a boil. Remove from the heat, add the lemon rind and pour the contents of the pan into a baking dish.
5.
Cook for 20 minutes, then cover and cool, then chill until cold. Discard the spices and bay leaves.
6.
Put the herring and liquid into cold sterilised jars, making sure the fish is completely covered. Add the chives to the jars. Cover and seal tightly. Store in the refrigerator for up to 10 days.
