- 4 shallots
- 1 ½ Tbsps butter
- 12 ozs Veal fillet (or beef filet)
- salt
- peppers
- 9 ozs Cherry tomatoes
- 4 stalks parsley
- 8 ozs Raclette Cheese
- 1 small Whole-grain baguette (8-9 oz.)

Preparation steps
Peel shallots and slice crosswise into thin rings.
Melt butter in a large non-stick pan. Cook shallots over medium heat until golden-brown, 2-3 minutes. Transfer shallots to a bowl, reserving butter in pan.
Rinse veal fillet and pat dry. Cut into 8 slices. In remaining butter, cook veal slices 1 minute per side. Remove from skillet and season with salt and pepper. Arrange on a platter.
Rinse tomatoes and halve or quarter, depending on size. Rinse parsley and shake dry. Pluck leaves. Thinly slice cheese. Put tomatoes, parsley and cheese in separate small bowls.
Prepare and preheat raclette set. Divide shallots, veal fillets, tomatoes and parsley leaves among raclette pans. Top with cheese slices and bake until cheese melts.
With raclette spatula, transfer each portion to a plate. Serve with baguette slices.
