40 grams whole almonds (blanched and peeled)

Preparation steps

1.

Whisk eggs with cream and season with salt and pepper. Heat butter in a pan and make 4 thin omelets, one at a time, for about 2 minutes per side. Drain on paper towels. 

2.

Rinse and spin dry baby spinach, cut into strips. Chop almonds and toast in a dry pan. Blanch chives in boiling water for about 10-15 seconds and plunge into ice water. Drain on paper towels. 

3.

Arrange omelets on a flat surface next to each other and top each with smoked salmon and spinach. Roll up and carefully tie with chives. Sprinkle with toasted almonds and serve.
